Hi everyone,

Thanks so much for the outpouring of support on my Facebook page. It’s been a lot of fun to talk to you all about upcoming projects, new developments, and your favorite moments in my — and other! — books.

Speaking of that, it seems a lot of you are finding it extremely difficult to locate a copy of the Bronze Horseman-based cookbook, Tatiana’s Table. I’m sorry about that — I’m not sure why it’s such a limited printing!

But this gave me an idea to do another giveaway — this time for Tatiana’s Table. I have ten copies that I want to give away in time for Christmas, so that you can make as many blinchiki and piroshki and beergaritas and mashed potatoes as your heart desires.

Here are the rules:

Please submit your favorite recipe and why you love it to my gmail account, paullinasimonscontest@gmail.com. It can be anything you love to make regularly, or a recipe you made once that was wonderfully memorable — and hey, maybe I’ll find a few new beloved recipes amidst the lot!

I’ll pick ten winners randomly. Please enter by Friday, November 25th, 2011. I will announce the winners on Monday, November 28th.

    Being Italian, my comfort food is spaghetti with ragù.
    Basically, the recipe revolves around the sauce.

    For 4 people

    2 litre tomato sauce
    500 gr minced meat (half pork and half beef)
    1 onion, 2 carrots, 1 sedan: they have to be cut in really small pieces
    oregano
    salt
    extra-virgin olive oil

    First, you have to brown the onion-carrots-sedan in oil (say, three full spoons); in another pan, cook the meat a bit: this way the meat lets the water out. Make sure there are no meatballs: the real ragù looks and feels almost creamy.
    When it’s “dry” again, put it in the pot with the browned vegetables and let it brown a bit, not too much.
    After, add the tomato sauce, salt and two spoons of olive oil.
    Cover the pot and let it boil for at least 4 hours, at medium-small fire, mixing every twenty minutes or so.
    Before serving, add the oregano.

  2. Grandma’s Chocolate Sheet Cake (Jesus Cake)

    My grandmother used to always make this chocolate sheet cake. I have countless memories of making this cake with her. Our whole family loves this cake and will eat every last crumple until it’s gone. Every Christmas my grandmother would make this cake for Jesus’ birthday and we would all gather around the cake that was sitting on the table and sing happy birthday to Jesus, which is why we call it ‘Jesus’ Cake’. My Grandmother passed away in September 2010 from ovarian cancer. Our first Christmas without her was very tough because she was the main person who made Christmas so special. My mother made the Jesus cake for this past Christmas. I remember thinking at the time that we were singing ‘Happy Birthday” that this cake and tradition will be passed on from each generation. I’m so thankful for this cake for giving me so many wonderful memories with my grandmother and family.

    Ingredients:
    •2 cups all-purpose flour
    •2 cups sugar
    •1 teaspoon baking soda
    •1/4 teaspoon salt
    •1 cup butter
    •1/3 cup unsweetened cocoa powder
    •2 eggs
    •1/2 cup buttermilk or sour milk
    •1 1/2 teaspoons vanilla

    Chocolate Frosting:
    •1/4 cup butter
    •3 tablespoons unsweetened cocoa
    •3 tablespoons buttermilk
    •2 1/4 cups sifted confectioners’ sugar
    •1/2 teaspoon vanilla
    •1/2 cup chopped pecans, optional

    Cake
    Grease a 15X10X1-inch or jelly roll pan or a 13X9X2-inch baking pan; set aside. In a large bowl, combine flour, sugar, baking soda, and salt; set aside.
    In a medium saucepan combine 1 cup butter, 1/3 cup cocoa, and 1 cup of water. Bring mixture to a boil, stirring constantly. Remove from heat. With an electric hand-held mixer on medium speed, beat chocolate mixture into the dry mixture until thoroughly blended. Add eggs, buttermilk, and vanilla. Beat for 1 minute (batter will be thin). Pour batter into the prepared pan.

    Bake in a 350° oven about 25 minutes for the 15X10-inch pan or 35 minutes for the 13X9-inch pan, or until a wooden pick or cake tester inserted in center comes out clean.

    Pour warm chocolate frosting over the warm cake, spreading evenly. Place cake in pan on a wire rack; cool thoroughly before cutting.
    Makes 24 servings.

    Frosting:
    In a medium saucepan combine 1/4 cup butter or margarine, 3 tablespoons unsweetened cocoa powder, and 3 tablespoons buttermilk. Bring to a boil. Remove from heat; add 2 1/4 cups sifted confectioners’ sugar and 1/2 teaspoon vanilla. Beat until smooth. If desired, stir in 1/2 cup coarsely chopped pecans. (Our family LOVES it with pecans) :) Enjoy, Paullina!

    My special Brownies: 200gr of butter. 1+1/4 cup of flour. 1+1/4 cup of suger. 1 teaspoon of instant coffee powder. 4 eggs. 200gr of dark chocolate box. A chochlate liquer if you like. 200gr of dark chocolate chips. How to make my lovely brownies: to put the butter in a bowl, than to warm the butter for a minute in the microwave oven. After you take it out you add the dark chocolate box into the warm butter and mix it. Than add the instant coffee powder and the chocolate liquer. Than add the eggs and continue to mix. Than the suger. Still mix it. Now put the flour inside and mix. Than add the dark chocolate chips. Now you have to put it on a baking paper in a baking dish. Bake it for 30-35 minutes on a warm oven (180 degrees). Hope you like it.

    Hi Paullina;

    I have been eagerly awaiting your giveaway since you first mentioned it on Facebook! I have been a fan of yours since I first read ‘Tully’ in 1996; and have always purchased your books the second they hit the shelves (I like first editions; they are big and pretty.)
    I envy those who have only known ‘The Bronze Horseman’ as a trilogy; after reading the first book at least 10 times; (and wishing for 12 simple words “Tatiana & Alexander reunited after the war and lived happily ever after,”) I openly sobbed with happiness in my local bookshop when I first laid my hands on ‘The Bridge to Holy Cross’ in early 2003. It was two weeks before my Wedding to my beautiful husband; so 2003 was memorable for more than one reason! I remember dressing for my hens night with a complete lack of enthusiasm as it was interrupting my reading time… (A similar scene erupted upon release of ‘The Summer Garden.’) For those fans who got to devour all three books in one delicious sitting; 5 years is a long time between drinks!

    Naturally I snatched ‘Tatiana’s Table’ up the second it hit our Aussie shelves; and thoroughly enjoyed the recipes within. Your Cabbage Pie has been a firm family favourite ever since! Which is why I am writing now. I cooked dinner for a friend and her mother; from recipes within your book. My friend’s mother was born in a concentration camp (her mother was a Russian Jew; a highly popular combination as you can imagine) and after praising my efforts which reminded her of her deceased mother’s cooking; I showed her ‘Tatiana’s Table.’ The recipes within bought tears to her eyes; so I told her to keep it with full intentions of replacing my own. Unfortunately this task proved nearly impossible; and I have been missing my book ever since.

    So now I am praying and hoping I can win myself a copy! Thank you for the opportunity; when I first read of your intent of this contest, I thought; “It has to be me!” So I will get emailing.

        I did write in; it was for my ‘Famous Pasta.’ Oh no, I hope it sent through ok; have been having internet issues. Have broken out in a cold sweat now…. Will check my outbox…

        And there it is in my ‘draft’ box :( And to think I was popping by to see if I had won a replacement copy. Will not cry, will not cry….
